Do we still need appmenu-qt instead of using appmenu-qt5?

In which sense "need"? appmenu-qt* is a hack to implement Apple-style global menu for the Unity compiz plugin. Avidemux doesn't need any.

avidemux functionality
- appmenu-qt5: no shortcuts, down arrow functions as up arrow
- appmenu-qt: functions as before
So we still need appmenu-qt on ubuntu 16.04.2 unity compiz

upcoming Ubuntu 18.04 LTS will ditch Unity 8 and ship with GNOME desktop. (2018/04)
Any idea how this will influence avidemux?

"We" need neither Unity compiz plugin nor appmenu-qt ;)

Ubuntu GNOME ships Ubuntu with gnome-shell as the default shell for GNOME since a couple of years already.
